I have two delicious recipes to share.

The first recipe is "Easy Refrigerator Crescents". I got this recipe from Kirsten, who found it from Aunt Bonnie. I have spent many years wanting and trying to make rolls, with very dismal results. I even failed at the frozen variety, but these turn out amazing every time I try them!

I will also warn you that they are really easy, but they take a lot of time- if you want rolls for dinner, you need to probably start in the morning. They need at least 4 hours of "sitting" time, but only a few minutes of hands-on time.

Easy Refrigerator Crescents

2 pkg yeast (or 5 tsp)
1/2 cup Sugar
2 tsp salt
1 egg
2 c. warm water
1/4 c shortening
6 1/2 c flour
butter, softened

In a mixing bowl, dissolve yeast in warm water. Add sugar, shortening, egg, salt, and 3 cups of the flour. Beat until smooth. Mix in remaining flour with spoon, hand, or dough hook until dough is easy to handle. Place in a greased bowl, turning once to bring greased side up. Cover loosely with plastic wrap. Refrigerate 2 hours. When dough rises, punch it down occasionally.

When fresh rolls are desired, remove dough from refrigerator, cut off amount needed, and keep remainging dough in the fridge for up to 3 or 4 days.

About 2 hours before baking, roll dough into a circle, spread with softened butter, and cut into wedges (like a pizza). Roll each wedge from large end to small, forming a crescent shape. Cover and let rise until double in size, about 1.5- 2 hours. Heat oven to 400F, bake 12-15 min or until golden brown.

***********************************

As a celebration for my new oven, my lovely friend Katie sent me all the ingredients to make Carmel Brownies. I made them for a family dinner, and they were loved by all! Later that week I had to make another batch, because they were just so delicous. I had several requests for the recipe, so here it is:

Carmel Brownies

14 oz bag of carmels
1/3 c evaporated milk

Cook over low heat, stirring until melted. Set aside.

1 pkg german chocolate cake mix
1 cube butter, melted
1/3 c evaporated milk
1 c chocolate chips
1 c pecans, chopped

In a large bowl, combine cake mix, butter, evap. milk and pecans. Press 1/2 of the mixture into a greased 9x13 pan. Bake at 350 for 6 min.

Remove from oven, sprinkle with chocolate chips and pour caramel over the top. Crumble remaining dough over the top. Bake for 15-18 min.

They are amazingly delicious. I'm sorry and you're welcome.

Weekly Menu

Monday: Roasted Chicken (cook 2), broccoli, fruit
Tuesday: Chicken Noodle Soup
Wednesday: Lasagna (from freezer), rolls, salad
Thursday: Pork Chops, rice medley, salad
Friday: party- bring sweet potatos
Saturday: Bean and Cheese burritos
Sunday: Chicken and Broccoli curry, rice
Monday: Leftovers or pizza

Southern Style Thanksgiving Sweet Potatoes

Here is one of my favorite "southern style" recipes for Thanksgiving dinner.

Sweet Potatoes: (never again will you want the ones covered in marshmallows)

6 sweet potatoes
1 c. sugar
2 eggs
1 tsp allspice
1 tsp cinnamon
1 c milk
2/3 c evaporated milk
2 sticks butter (you heard me. Put in both sticks)
2 c cornflakes
1 c brown sugar (brown sugar is a must in southern cooking)
1 stick butter (yes, another one. Don't try to skimp)
1/2 c nuts (pecans, of course)

Cook potatoes. Mix cooked potatoes, sugar, eggs, spices, milk, evaporated milk, and 2 sticks of butter. Pour in baking dish. Mix brown sugar and 1 stick butter together. Stir in nuts and cornflakes, sprinkle on top. Bake at 300 for 45-60 min or until done.

This makes the most deliciously sweet dish with a crunchy candy topping. I look forward to this all year long, but I never make it more than once a year (it does have quite a bit of butter and sugar)!

Menu for the week

Mon- enchiladas (from freezer)
Tues- lasagna
Wed- veg beef stew
Thurs- leftovers
Fri- pizza
Sat- camping
Sun- camping
Mon-camping/coming home - It was actually pretty easy. Just gather the ingredients- sticky rice (Botan brand at Walmart in the Asian section), imitation crab, avacado, cucumber, seaweed paper, wasabi sauce and pickled ginger (the last three things I got at a farmers market).

When the rice is cooked, make a vinegar sauce to pour on- I had 1.5 c uncooked rice, and used 1/4 c rice vinegar, 1 tsp sugar, 1 Tbsp salt. Pour over rice and let cool.

Place a sheet of seaweed on a piece of plastic wrap, spread a thin layer of rice, then add in avacado, crab and cucumber. Roll really tight, securing the ends with a little water. Slice and serve! Use the pickled ginger and wasabi as garnish, dip in soy sauce.

It was really good! I will be making these again!

Last week I used our rice molds again- Abigail loves the rice for some crazy reason. It is just cold rice- when I make something with rice earlier in the week, I just stick some of the leftover rice in the mold, then stick it in the fridge. On lunch day I just pull it out, sprinkle a tiny bit of salt on it, then decorate. But she goes on and on about how much she loves them. Whatever, but I will go with it! I made the faces with pepperoni, olives, and cheese. And some parsley for the color. Then I took olives and cheese and made some small kabobs. The bottom has an orange, celery, and one more olive.

This week we again did the rice, but with better faces. I used pepperoni and some sesame seeds that Dane uses. More olive/cheese kabobs, some lettuce for color. I need to go grocery shopping, so I got lazy with the bottom tray- just some chips (gasp! horror!) and I was just going to leave it at that, but she insisted that we put more lettuce in. Sure, kid! She said that the face to the far right "looked like Grandma". That made me laugh!

Cottage Pie Freezer Meal Tutorial

Here is one of our easiest and yummiest freezer meals: Cottage Pie!

It is similar to Shepard's pie, but has a slightly different flavor. I like Shepard's pie, but Kydon hates it. We both like this version!

Start with the ingredients:

Ground beef browned with onions

Corn or green beans (I like to use both)

Undiluted condensed tomato soup

Salsa

Mashed Potatoes

Cheese (optional)

Line your pan with tin foil. I like to use my mini-loaf pan and make individual servings. You could assemble it in any size you like. I think muffin tins might be fun as a young-kid size. (Of course I think of that now after I am all done with mine).

Then just start layering! Ground beef, corn/beans, tomato soup, salsa, potatoes, and cheese. I used cheese the first few times, but I left it off once and didn't miss it, so now I always leave it off.

I don't know the exact amounts I used- just a tablespoon or so of the soup and salsa.

Then just bag it up, label, and suck out all the air (I use a straw).

I pack 5 of these for our family- 1 each for the adults, and 2 for the kids to share. I started with 5 lb of ground beef, and I made enough for 3 complete meals for the freezer, plus there were 6 leftover for dinner tonight.

They just need to be heated up in the oven- about 30 min if defrosted, 1 hour if frozen. You can also heat them in the microwave, if planning to use the microwave, line the foil with plastic wrap to make them easier to get the foil off before heating.

December Menu

Monday: Chicken Foil Packs
Tuesday: Corn Chowder
Wednesday: Cottage Pie (make extra to freeze)
Thursday: Spaghetti (make extra sauce box- roll up a tortilla, then stuff with carrot sticks, mini corns, ham rolls. It looked SO cute! But I didn't have the stuff to do it, so we did this:

Kabobs with ham, cheese, and olives, kiwi fruit and a bunny biscuit.

I thought ahead this week and when I made biscuits earlier, I cut one out with the bunny cookie cutter, and saved it for this lunch. I also was given a good idea to use spaghetti noodles as the toothpicks. I like that because it is cheaper, easier, you can make them the size you want, and Abigail loves to eat spaghetti noodles. And I don't have to worry about her swallowing a toothpick! Every morning I would say "don't swallow this toothpick, okay??" I know she thought I was crazy, but now I don't have to worry!

Mealtime shortcuts

Here are a few shortcuts that I have been taking advantage of so that my meal-making goes a little faster.

When I make my roasted chicken, I buy and cook two. We eat what we want for dinner one night, then I pull all the meat off, and stick it in the freezer. Now we have chicken for almost a month, and it is already cooked and seasoned.

I also do this with ground beef- brown a bunch of meat and onions, use what you need, then freeze the rest. There are a lot of recipes that call for ground beef.

Make some refried beans. I bought a bag of pinto beans, stuck them in the crockpot all day, then blended them with my food processor. It was one of the easiest things I have done in a long time. I then froze them in bags with about 1 cup in each bag. I have loved having it in my freezer all cooked up and ready to go. I used to keep cans on hand, but this was about $2 for about 10 cups, where normally a can is $1.

What are your mealtime shortcuts? What do you do to make it easier to get dinner on the table?
<img width='1' height='1' Yay for cute lunch!

Bento Box

You can see my first few attempts at Bento here. First, the day before I had made the Roasted Chicken. When I cook the chicken, I always cook two, and freeze all the leftovers. That usually gives us enough chicken for the rest of the month.

So last night I made the lemon chicken pasta. It was AMAZING! It was so simple and easy- cook spaghetti, melt butter, add lemon juice, dill, and chicken seasoning. I also had some asparagus that needed to be eaten, so I threw that in. Toss the sauce with the noodles and chicken, and you are done!

I made way too much, and was trying to think of how to use the leftovers, but there wasn't any left! Kydon had to keep us away from the little bit he wanted to take for lunch the next day. This will be a new favorite, since I almost always have all those ingredients on hand.

October Meals

Monday: order pizza
Tuesday: Quesadillas
